| Wal-Mart Goes Organic!? In an article written for the New York Times business section published on May 12, 2006, Wal-Mart announces that they are going organic. "As the nation's largest grocery retailer, Wal-Mart has decided that offering more organic food will help modernize its image and broaden its appeal to urban and other upscale consumers."
Wal-Mart is not the only large company to notice the appeal of organics to a growing community. Safeway, Kellog and even Kraft have jumped on the band wagon with organic version of their popular products such as Organic Rice Krispies and organic macaroni and cheese.
The question remains, is this a good thing? On the one hand it employs more organic farmers and organic products are reaching an even wider source of people, but on the other hand, are the products able to maintain the same standards? No.
In order to mass produce the new organic products, the standards are most definitely lowered. To be certified as organic by the U.S. Agriculture Department, food must be "free of most pesticides, synthetic fertilizers, hormones, antibiotics, genetic modification, and irradiation." Additionally many argue that true organic food also entails respect for locally produced food, respect for livestock and employees, and environmentally sustainable practices. Most of the larger producing organic products are unable to maintain all these standards.
Many of the companies which supply these greater chains are being questioned on their ability to maintain this quality. Wal-Mart, for instance, was able to a cut a deal of 15% below cost of its competitor Organic Valley; with industrial milk giant Dean Foods, owner of Horizon milk. Wal-Mart expected Organic Valley to follow suit, but instead they pulled out. "Looking for ever-lower costs comes at a real cost to sustainability," says George Siemon, Organic Valley's chief executive. "To have consistent supply, you have to change the paradigm of thinking and think about long-term partnerships."
In order to ensure the quality of your organic food, I encourage you to look at the process it has gone through, because it still remains true that, although many diet fads come and go, the fewer people and processes that have touched your food the healthier it is.

Soy: The Good, the Bad, the Ugly
 Many health food stores and articles have been written about the positive effects of Soy for hot flashes, immune function and, at the least, it has been touted as a great source of protein. The truth about soy is far more complex.
Soy comes in a variety of forms, including the modern highly processed version. Originally most Asian cultures ate small quantities of fermented soy. Miso and soy sauce, originally the liquid drained off miso during the process of making miso, were followed by two other fermented soy products tempeh and natto. Fermented Soy is the healthiest version of soy to be eaten.
Historically the next product formed was tofu with the liquid drained off in this process marketed as soy milk. From there enter the western mind and we have a wide variety of soy products that have been highly processed to resemble a different food substance such as milk, cheese, meat, and crackers.
Almost all of these products are highly processed and difficult for the body to utilize. By the time the finished product looks and tastes like the intended food, MSG, sugar, high heating processes and different soaking solutions to change the chemical makeup of the food, very little nutrients or health value is left to the food.
Furthermore, soy is being found hidden in a large variety of foods. One article states that 60% of food found in our grocery stores and health food stores have had soy hidden in them because of its disguisable nature and it is inexpensive.
Fast food hamburgers and Bumblebee tuna, for instance, are known to have soy. Leading to an increase in allergic reactions, soy has been noted as one of the top eight allergens to cause immediate hypersensitivity reactions such as coughing, sneezing, runny nose, hives, diarrhea, difficulty swallowing, and anaphylactic shock.
The truth is, soy should be eaten in small quantities as it has been for centuries in Asia. Once Western marketing got a hold of it and started using it in mass quantities in the form of soy milk, tofu, soy nuts, soy cheese, soy meats and other products, the amounts of soy processed and consumed has risen incredibly.
Soy has actually been linked to multiple problems in numerous studies such as: malnutrition, digestive distress,immune-system breakdown, thyroid dysfunction, cognitive decline, reproductive disorders and infertility -- even cancer and heart disease.
